Making cupcakes is very easy, but it is still worth learning a few tips about how to make cupcakes which are just as good as a professional baker would make them. You can choose any cupcake recipe, but if you are new to making them you might like to start with a basic recipe for cupcakes instead of something very fancy.
Choose a muffin pan. Standard-size muffin pans have 2½ inch cups, mini-size ones have 1¾ inch cups, and jumbo ones have 2¾ inch or even 3½ inch cups. You can also get square ones for an unusual look. Line the pans with white, colored, plain, or decorative paper cupcake liners. Cupcakes are easier to get out of the pan if you use paper liners and they also bake taller in them.
It is easier to frost cupcakes in paper liners too because you can get a good grip on the liner instead of squeezing the delicate cake. If you do not have paper liners, you can either grease and flour the individual cups in the muffin pan, or bake the batter in flat-bottomed ice cream cones. You can also get silicone baking cups from craft stores and these do not need to be greased. Put the individual cups on a baking sheet, add the cupcake batter, and bake.
Fill the cupcake liners about 2/3 or ¾ of the way full, so you will need to add about 3 tablespoons to each one. Do not add too much, else the cupcakes will overflow and make a sticky mess in the baking pan. If your batter is thick, it is easiest to scoop it into the cups with a pair of teaspoons. A small ice cream scoop is also a good way to do this.
If you want to pipe your batter into the cups, then put it in a thick bag and snip off one corner, and then squeeze it into the cups, putting a finger over the hole between cups so it does not drip. If you are using a thin batter then you can pour it from a measuring cup into the paper liners.
Most 2½ inch cupcakes are baked at 350 degrees F for about eighteen minutes, but every recipe is different. This is simply a guideline. A recipe that makes 24 standard cupcakes will make about 13 jumbo ones. These should be baked for about 25 minutes. The same recipe will make 64 mini cupcakes and these take about 12 minutes to bake.
Test to see if the cupcakes are done by inserting a toothpick into the center of one. If the toothpick comes out clean, the cupcakes are done. If not, give them a few minutes more and try again. Let the cupcakes cool for ten minutes in the pan because hot cupcakes are quite fragile. Use a metal spatula to get them out of the pan, and then let them cool fully before you frost them. The air circulating around the wire rack helps them to cool faster. When they are cool, you can frost them or decorate them as you choose.
