Cupcakes are little cakes which are often baked in paper cases. If you do not have a food processor, you will need to use a cheese grater to grate the carrots by hand. This can be time-consuming and watch your knuckles if you are using an old-fashioned kind of grater!
This recipe is very simple and the carrots, brown sugar (use light or dark brown sugar here) and walnuts add a wholesome flavor. You could swap the brown sugar for white sugar if you want to use it. Choose low-fat buttermilk if you want to reduce the fat count a little. These cupcakes have a wonderful flavor and they are light and airy, as all cupcake recipes should be.
Ingredients -
1 lb peeled, sliced carrots
6 tablespoons vegetable oil
1 ¾ cups brown sugar
⅓ cup buttermilk
1 oz finely chopped semisweet chocolate
½ teaspoon salt
2 cups all-purpose flour
3 eggs
2 teaspoons baking soda
24 walnut halves
For the Frosting:
3 cups powdered sugar
¾ cup butter
1 teaspoon vanilla extract
Preparation:
Preheat the oven to 350 degrees F.
Process the carrots in a food processor until they are very finely minced.
Combine them with the eggs, buttermilk, oil, and brown sugar in a bowl.
Spoon the flour into a dry measuring cup and level it off with a knife.
Stir the flour, salt, and baking soda together with a whisk.
Add the flour mixture to the carrot mixture, stirring until smooth. Stir in the chocolate.
Divide the batter between 24 paper case-lined muffin cups.
Bake the chocolate carrot cupcakes for 22 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
Let the cupcakes cook in the pan for 10 minutes, then take them out of the pan and let them finish cooling on a wire rack.
Beat the frosting ingredients together until the mixture is smooth.
Pipe the frosting over the cooled cupcakes and decorate each one with a walnut half.
